Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg

  • ½ teaspoon ground ginger

Instructions

  1. Preheat your oven to 350°F and prepare two round cake pans by greasing and flouring them.
  2. In a bowl, sift together the flour, baking powder, baking soda, spices (cinnamon, nutmeg, cloves, ginger), and salt. Set aside.
  3. In a separate large bowl, whisk together the sugar and vegetable oil until well combined.

  2. Gently, fold in the grated carrots, chopped nuts, dried fruits, and orange zest (if using) until evenly distributed throughout the batter.
  3. Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula. Then, bake in the preheated oven for approximately 30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
  4. Once baked, remove the cakes from the oven and allow them to cool in the pans for about 10 minutes.

Cream Cheese Frosting:

  1. In a mixing bowl, beat softened cream cheese and butter together until smooth and creamy.
  2. Then, add the powdered sugar to the mixture gradually, beating well until the frosting is fluffy and well combined.

Cake Assembly:

  1. If necessary, level the cake layers using a serrated knife to ensure even surfaces for stacking.
  2. Place one cake layer on a serving plate and spread a generous amount of cream cheese frosting evenly over the top.
  3. Carefully place the second cake layer on top of the frosted first layer and spread another layer of frosting evenly over the top.
